I have paid for my 19 year old's return ticket to Europe with my NAB platinum credit card. She is travelling alone. Will she be covered by the card's insurance policy if I do not travel with her?

I do not think she is unfortunately, as I believe you would have to be travelling with her as card holder (in fact, don't even think that people travelling with you are covered).
However, with these kind of questions I would strongly advise you to call NAB and get the answer direct from them, rather than rely on what readers of this website have to say. Better safe then sorry in this case.

I have the same card and I am pretty sure I've asked that question to NAB previously, and gotten the response as KG says above. Cardholder needs to be travelling together, and might need to be family member as well? Only way would have been if she had a supplementary card.

Definitely not, I also have an NAB platinum card and have just been through that same exercise, I had to pay for separate travel insurance for my two sons even though I paid for the tickets with the credit card.

Ask card provider, but most likely not. Also bear in mind that those card insurance worth nothing - you will be pressed VERY hard trying to get anything from them that is beyond extraordinary circumstances like broken arm. And even then you have to provide pile of paperwork. Good Luck.

Agreed, not covered. I have NAB Platinum and been thru this with partner who has a supplementary card to mine- If in future you get a supplementary card for her, and buy the tickt on that card, she is covered, as they cover "any NAB cardholder", which includes the supplementary card holder. (I did have an AMEX, that specifically EXCLUDES the supplementary card holder - NAB are one of the few that do)
