Noting that Qantas international flights are a lot cheaper "return" than 2 "one ways", is it possible to book 2 one ways in different classes without paying the one way premium? Doesn't seem possible online, would i be able to book it through the phone or a travel agent?

Contact QF telephone sales. You can't book a return ticket on 2 separate classes on the website, unless it is one way.
