Transfer at HKG def is a breeze. There is a reason why HKG is always consistently in the top 5 airports list. There are plenty of security screening points between the arrival and departure level, but flights to Aust/USA tend to depart from gates 68-71 (end of the northern pier) due to the additional carry on luggage screening required.
There really is only one terminal in HKG as terminal 2 is simply an additional check in area and passengers end up coming to terminal one for the flights.

Transit CX to CX in HKG?
If I fly NRT-HKG-SFO is it an easy transit in HKG (i.e. remain airside, etc)

Yes it is very easy. You will of course have to go through security at HKG once you've arrived from NRT before boarding the SFO flight.
CX operates from Terminal 1. Gates are within walking distance but there is an automated people mover to get you across from gate 20 to gates 40-71.
