I'm trying to book QF9 from MEL-PER for February 2023, but cannot find the Dreamliner. Only 737s or A330's show up. I am QF Gold. How can book to fly on the Dreamliner on this domestic segment?
QF are running such a tight schedule at the moment with aircraft that QF9/10 is been turned around in Perth instead of continuing through to Melbourne and a 737 or A330 (when available) is used for the domestic portion of this flight.

The timing of QF9 & 10 does not support the use of a single aircraft out of Melbourne (QF9 leaves about 4 hours before QF10 arrives). When these flights were introduced they shared aircraft that worked MEL - LAX - MEL - LHR - MEL etc. Qantas are still capacity limited on international without all the A380s woken up, so they are finding the best utilization for what they have - seems a reasonable strategy, but a bit challenging for the customers at times when timetables are changed frequently.

Its there, but its not a daily flight so maybe you're looking on days its not operating?

It is consistently being downgraded to an A330 or cancelled. Don't get your hopes up.
