Does checking in online restrict your ability to make changes such as changing a flight or receiving complimentary upgrades? Is there any point in checking in online if you have already selected your seats and have bags to drop? Both questions for QF and VA. Thanks!

It really depends but usually not. Checkin staff at the airport or in the lounge can change that.

From experience, they can change the seats at the check in desk if you ask politely.
I even had one instance when flying business where Virgin opened a closed flight for me. Special circumstances as I was checked in on another flight that had mechanical issues without a definite fix timeframe and I asked to be moved to the next flight which ended up leaving earlier. It shows that a lot of things are possibly if you ask - nicely!
