Why doesnt Jetstar fly out of Canberra to many destinations?

Good question. They dont fly to canberra at all do they?? Then take a look at the Gold Coast. Why dont Qantas go there?? There may be agreements in place between the two airlines not to eat the other's lunch.

yes exactly. I mean, maybe if the other was hungry - well fair enough, fair shake of the sauce bottle, mate! - give it back!! if they made regular trips from GDC - CBA and HBT - CBA, im sure they'd get the blessing!

Airport Party, I'm confused by your post:
GDC - Greenfield Donaldson Airport, South Carolina
CBA - Corner Bay Airport, Alaska
HBT - Hafar Al-Batin Domestic Airport, King Khalid Military City, Saudi Arabia.
I'm not sure how any of these airports are relevant to the general Australian Business Traveller.

Canberra is a very big business/political destination, not really the leisure markets that Jetstar tends to penetrate. Trying to compare Canberra to the Gold Coast simply doesn't work. There is, no doubt, an element of tourism in the Canberra traffic; however, this would most likely be amongst those who are more likely to choose a full service carrier either way.
The Gold Coast is almost purely tourism and leisure. Thousands of family's on holidays and sun seekers each winter! Virgin are somewhat deluded if they think they can make business class make sense on routes to the GC. There is a good reason why QF transferred those routes to JQ.
A final thought for Canberra. JQ would probably have struggled in the past as Virgin were also offering LCC fares. However, with the upmarket game that Virgin are playing, there may well be room for JQs presence. Plane size could be a problem, because JQ buses hold 180 ppl, where as Virgins ATRs hold ~70, QFs 737 - 400s hold ~ 140 - 150....JQ planes may hold too much capacity for some Canberra routes.

Yes its true what you say about Canberra, not quite as much of a tourist attraction, but its quite a centeral point, for those who are too far from sydney. What about Tasmania? Is there some reason why there isn't a jetstar flight from Canberra to Hobart?

Canberra has been suggested as the future LCC terminal for Sydney, if that happens we will surely see Jetstar flying to Canberra. As for JQ flights from Hobart to Canberra, as I mentioned above JQ planes have a 180 seat capacity, its the highest capacity of QF/VA/JQ narrow bodied aircraft and there would have to be high demand for that route to make sense. You can actually get really good deals on connecting flights to Canberra from all major Australian cities, and often with swift connections!
