Hello Liese, the easiest way is just to sign up at Qantas.com.au but it will cost you around $80, if you get a Woolworths Everyday Rewards card (which earns Qantas points) your Qantas Frequent Flyer membership will be free.
However, note that if you are flying on an Emirates flight booked via Emirates (or one of their travel agents), with the Emirates 'EK' flight number, you won't earn many Qantas points. You will earn the most Qantas points if you fly on an Emirates flight booked via Qantas (or one of their travel agents) with the 'QF' flight number, even though it is an Emirates plane.
See http://www.ausbt.com.au/qantas-frequent-flyers-points-free-seats-and-upgrades-on-emirates-flights for more on this.

Yes, that would also be a pretty easy way to do this!

Or given you appear to be based in South Africa, it might be better for you (if likely to fly more on Emirates in the future) to get your husband an Emirates FF account and credit to that (like you are doing for yourself).
The advice given above is only correct for Aus/ NZ residents. People outside Australia have no joining fee for QFF.

Joining BA's Executive Club might also be a valid alternative if your husband isn't going to be flying Emirates. This may allow your husband to earn points on the Qantas flight as well as maximise the earning potential on any future domestic flights British Airways flights operated by Comair within South Africa.

Alternatively, if your husband has a South African frequent flyer number, you may be able to earn points to that program rather then opening up a new FF account if you are travelling on Qantas flight number and metal.

Liese,
As I understand it, customers domiciled outside Australia are entitled to sign up to QFF for free.
You'd go online at the Qantas website, enter your husband's personal information and be given a QFF number which you can append to your husband's booking.
What is puzzling however is your desire to sign him up to QFF when you are a Skywards (Emirates) member. Was there a specific reason why you wanted him to sign up to QFF instead?
