My last Business flight was Brisbane to Singapore on QF 51 (which should be similar to QF 5, with lunch and snack), and it went like this:
Boarding
Pre-departure beverage. There are a few choices; I had apple/strawberry juice. Excellent stuff.
Lunch - Shortly After Takeoff
Pre-meal drink. I had a G&T with nut mix.
Starter plate. You have a couple of choices, like a baked spinach/feta pie or similar tasty appetiser; this comes with a salad and bread.
Main plate. There are more choices, and you can expect very Rockpool-ish dishes. There will normally be at least one dish with red meat, one with chicken, and from my experience you can expect fish and/or something vegetarian to be on offer. They can be anything from a schnit toastie to blue-eye with curried noodles.
Dessert. This is usually ice cream or the cheese plate.
Snack - Shortly Before Arrival
One main plate from whatever is left from the lunch service. The FAs should tell you what's still available. You will get a beverage service with this, of course.
Further Snack - After Deplaning (not part of QF J)
After exiting CIQ, go down to the Terminal 1 food centre and enjoy hawker delights. Ponder the possibilities of converting your food centre meal into a Qantas J meal.
The food centre joke aside, this is how I understand the Australia to Singapore catering is structured on Qantas Business Class.
