You can pay to access the Air New Zealand ($55 for up to 4 hours), The SkyTeam Lounge ($77 for two hours and $132 for five hours) or the amex lounge (if your a card member)
The Air New Zealand lounge would be my pick as its newly refurbished but the skyteam lounge (never been in just used the showers as apart of the amex lounge above) seemed quite empty so you might get more rest down their
Just to clarify, you can only pay to access the AMEX lounge in Sydney if you have a card that comes with free visits and you've already exhausted them in the same year - other cardholders can't pay for access to the Sydney lounge.
(That's a bit different to AMEX's Centurion Lounges where any AMEX cardholder can pay US$50 for entry.)
