I went to Europe a few weeks ago, and went on a Qantas A380 First Class, personally it was very relaxing and had good service and meals.
Although this depends on you, Do you have status with any airlines?, Price Range?.
Where you looking to go economy?
I was looking to go First

I would choose SQ. I flew with them on a 777 first class (to Singapore though, not Europe) and I enjoyed the experience. Even better if you can fly on their A380.

Qantas or Emirates all the way......Emirates have shower facilities on-board which is an experience not to be beaten.

QF australia to dubai then emirates, return qf if from uk then emirates from dubai or emirates all the way if elsewhere.
It depends on a few factors: lounges qf 1st in syd / mel best, ek in dbx excellent
on board I have found food and wine better in qf on aus departures, otherwise ek much better. bed better on QF as are cabin crew.
BA lounge T3 is excellent if travelling in F as u get access to F dining area.
Consider status credits and FF points. A qf/ek trip in 1st will give you gold immediately and 30000 ish ff points.
If you are a star alliance / VA customer then perhaps singapore?
enjoy!!

If it's ex Sydney, then I'd recommned Etihad on their new A380 first class.
By far the best soft product in my opinion, and excellent service, food, etc...
