Traveling from Ayers Rock to Tullamarine with Jetstar and then on to Perth with Qantas. Scheduled to arrive in Melb at 3.55pm and depart Melb at 5.05pm. Am I cutting the transfer too fine? Will have only hand luggage, and can checkin online.

Depends on an on-time arrival - you could be unlucky.  At least you have a couple of later flights to PER as a backup plan.  Pity you can't go direct.

Just have to go from the Jetstar pier of T1 to the 2nd pier of T1.  Or closer to arrivals.

2nd pier of the QFdom usually handles the wide bodied 330 to PER, down the far end.  If you get the narrow 737s to PER, it could if you are lucky be at pier closest to where JQ arrives into.  Pier 1 can also have 330s nearer the arrivals hall.  Gate 1 or 2 or 3 or 4 of the QF dom sometimes have wide bodies.  Otherwise its that sort of side ways plane park near the end of peir 2.

MEL airport to transit is easy, once you get your bearings.
