I do this trip frequently, first is a bar service followed by dinner, lately just a hot and a cold meal choice. Yes there is a sweet/dessert on the tray and a small Lindt chocolate square finally a tea/coffee service. Sorry I have no experience with special meal selections on this route.
You'll get the usual hot/cold domestic dinner choice; typically it's a modern Australian hot main, e.g. grilled fish with potatoes and broccoli, vs. a salad-type cold main that I usually tune out on while I wait for the CSM to finish rambling so I can order the hot main.
As there is more time than MEL-SYD, you should have a longer beverage session before the meal.
Certainly there will be a pudding of sorts, as that is included even on MEL-SYD - I recently had a very nice banana tart ex-MEL, by the way, of the kind I'd gladly pay for in a shop - and there will be a small chocolate ball as well.
There is also tea and coffee that can be made on request, which is made fresh when you ask for it (and on some flights, nobody has asked for it and so none was brewed); I have also previously been able to ask for hot chocolate.
No idea about special meals, though; but if you don't actually have dietary concerns, then the usual meal is normally very nice.
