Depends, Etihad you would be flying on an A330 all the way in a 1-2-1 Configuration, where as on Qatar you would be flying a 777 in a 2-2-2 config to DOH then onto FCO you would be flying the Dreamliner in a 1-2-1 config.
From my own preferences I would fly Qatar, they were awarded Skytrax Airline of the year and have some of the best Business products around, there is just something I don't really like about the Etihad A330 Biz Class.
The Decision is up to you!

Or you could fly Emirates with the A380 out of Perth then A380 to Rome 1-2-1 configuration. I flew it to Milan in April and was brilliant.

Have done Emirates A380 all the way through to Rome in business from NZ. Only failing is that they use the Alitalia Lounge at Rome, which is truly dreadful. Mind you, it is only for an hour or so.

Finnair - by time you flying they should convert all planes to fully flat seats, they cheaper, service is great and transit in Helsinki is a joy. Plan to have 4+hr connection and go to sauna. Apparently flytime is not that much longer and only negative is two stops.

Qatar J is outstanding on A380/A350/787 and lounge in Doha is great. The 777 product is outdated.

You can connect in SIN for an A350 to DOH if you're up for a second stop
