It looks like I'll need to stay around Circular Quay on Christmas night and boxing day (25th to 27th). Some hotels have a reputation for doing something special for solo travellers at Christmas, but nothing is guaranteed, of course. I'm not looking for a full book 6 months in advance Christmas buffet, just some idea which ones tend to be more welcoming for single travellers. Has anyone experienced any nice surprises while staying on Christmas day? I have various status levels with all the major chains so I'm open to most options.
The Four Seasons is right at Circular Quay, and they used to have a gingerbread house in the foyer at Xmas, which was a nice festive addition.
Great hotel, but in my experience as a long-term resident, was that they're not particularly likely provide surprises. Maybe you could put in a request if you had anthing in mind.

I cannot tell you exact hotel, but you should be able to see Harbor Bridge from your balcony to have most fun.
