Check-in counters for a specific flight don't normally open until 3 hours prior to departure. I have arrived earlier before and at busier airports you may not be able to check in. Additionally, lounges normally have a 3hr limit although i'm unsure how harshly this is enforced.

At Hong Kong use the Check in an the City. You will be issued your boarding pass and bags will be sent along. I have done this in the AM before going to work (its been a few years so not sure if this has changed), worked all day then gone to the airport around 6 for a midnight flight.

Was on HKG last week and you can use the City check in at Hong Kong Station up to 24hrs before your flight departure.

You're able to check your baggage in Macau Ferry Terminal before board your ferry to SkyPier. I've tried that once (ferry departs at 10AM and flight to MEL depart at 7PM), and the baggage indeed arrived Melbourne.

I have had no issues checking in way before my flight at Hong Kong Airport. You can even do online check in 48 hours before departure, and just head straight through immigration (after, potentially, dropping your bags) with your mobile boarding pass and get into The Pier for five relaxing hours.

Except for flights to the US, Cathay Pacific will accept baggage 24 hours prior to departure at the airport. You'll need to have some form of status or flying J/F (which you are) but I've had no problem in the past doing so and no I'm not talking about in town check in, I mean at the actual airport.

CX has 24hrs check-in counters at Hong Kong, you can check in any time within 24hrs of departure time.
