I am flying to Frankfurt from Melbourne in October, departing Melbourne on QF at 23:55, arriving in Dubai at 7:05, then departing Dubai at 8:25 on EK. This was an option when I booked through Qantas, but the 1hr 2minute transfer doesn't seem like much. Should this be enough or should I be preparing myself to get on the following flight to Frankfurt?
It should be fine....you can normally get between flights quickly. We normally take no more than 30 minutes to get to the next gate, even if you are at a remote stand and have to go by bus.
If you are on A380s fine but last year it took one hour from the remote stand to the terminal: an inordinate wait for a bus in the heat then a slow bus trip in; then a train to the other terminal. Dubai can be very slow indeed

Both flights are on A380, so you will not have to change terminals in Dubai.
