Emirates would better given its their flagship lounges at their hub.

You may only be able to use the Emirates lounge anyway. Emirates is in a separate terminal from all other carriers (except Qantas, which will be in the same terminal) and I don't believe switching terminals is as easy as in Singapore (for example).

Hi Peter. I understand my onward flight is departing from T3 in Dubai, which is where the Cathay lounge is apparently located.

Terminal 3 is exclusively used by Emirates (and soon also by Qantas), so there are only Emirates lounges there. The Cathay lounge (which is shared with/run by BA) is located in Terminal 1, which you would probably have to take a taxi to if you hope to visit during a short layover.
The Emirates lounges are far better anyway, especially if your flight departs from the new A380 concourse where there are brand new lounges.

I would definitely stay in the new concourse and visit the EK lounge. Its brand new, holds in excess of 2200 people and as someone already said, its their flagship lounge. Food and wine selections are also excellent...
