I'm trying to book LHR-DOH-SYD on QF points. However, as my plans are likely to change due to business meetings still TBC is there any way to book them as separate tickets? It doesn't look like an option on the QF website...
Strange. It seems the website does not support origin of Doha and only as a destination. I would suggest you check with another oneworld program like British Airways Executive Club or Asia Miles to find the award space and call Qantas to book. I'm sure they'll see the space and happily book it for you.
Yes, you have to call Qantas to book Qatar Airways tickets originating in Doha: it's a currency issue as Qantas can't ticket in QAR, so when you make the booking over the phone, they convert the amount payable to AUD and collect it that way.
However, if your journey starts somewhere else, such as Sydney or London, or you make a multi-city booking from those same cities, you can book online - the only problem is when the itinerary you're trying to book originates in Doha.
