I'm doing a trip to Tokyo on the weekend. Would the Qantas Lounge in Narita be my only choice or are there better options? I'm Qantas Gold flying economy with Qantas. Thanks.

You would have access to the Japan Airlines Sakura Business Class, Cathay Pacific Lounge, American Admirals club lounge in addition to the Qantas one. From reading reviews, Japan Airlines' is the best with Qantas being second. The worst is definitely Cathay Pacifics'.
Yes the CX lounge is a bit Spartan on food, but last time (last month) I was in there, they had Veuve Clicquot champagne on the counter and Haagan daaz ice-cream on request. It's right next to the emirates lounge which opens at 6pm, so not a bad option for a couple of minutes.
The American lounge is good for getting a bite as it does have a reasonable buffet. The Jal sakura lounge might be accepting other passengers again as they did open the new first lounge. The Jal lounge is good for a nice curry.
Qantas is fine, but it is in the satellite, so it's a few minutes walk away.

I thought the AA lounge at Narita was great. Good views and the best shower of any airport lounge I've ever been to.

The JAL lounge is great, but only accessible to JAL passengers during the renovations. Avoid CX at all costs
