You could try Tel Aviv to HKG (w CX) and then HKG to Melbourne (w CX or QF).
Indeed - try doing this using the multi-city search. Alternative is to search only from Tel Aviv to places like Hong Kong and Bangkok, and then searching for the HK/BKK-Melbourne leg separately to find availability, then booking together via the multi-city tool.
Depending on the time of year of travel, another option is to go via Johannesburg. El Al has flights daily from Jo'Burg to Tel Aviv and then you could get the Qantas flight from Sydney.

Not sure what you are doing but award searches for Tel Aviv to Melbourne works just fine doing it yourself on the website.

Yes, that's how I do it. Book the 2 legs separately. I like to stay over in HK or BKK to break up the trip.

You could also try Qantas/Cathay/Malaysian & Royal Jordanian combo. You'd have to call Qantas for that I'm guessing?
