I'm planning on redeeming KF miles for a Business class
ticket on SFO - MEL in June 2020 for my wife, daughter (<2 yrs) and myself.
I'm short by about 30K miles which I will accrue by end of December.
The question is if I book my wife in Business and myself
in Premium Economy to take advantage of the available seats at the moment, will
I be able to change my class of booking to Business once I have enough KF
points?

On a side note, I've also booked a reward ticket using
Qantas points (MEL- DXB-SFO) in Business & First to satisfy my fetish to
experience EK :) and the
booking is confirmed. My friend advised that sometimes Qantas downgrades the
booking class, is this true? Or is my mate just trying to upset me? Thank you

Yes, it's fairly easy to change the class of travel of an SQ reward ticket online. I recently did it myself from economy to business and it only took a few minutes.
You would need to pay the difference in KF miles plus a change fee of US$25.
However, there would need to be business class availability for your flight. If those seats are taken by the time you have enough miles, then you'll need to hope another one gets released before June or you'll be stuck. Seats may become available in the last few days before travel.
When we booked our upcoming (March 2020) SQ reward flight (Suites to SIN and J to LAX), we only had 1,000 KF Miles in our account. We advised we would be converting points from AMEX to KF. The agent told us he would reserve the booking for us, and when we had the miles, call back and they would ticket it. They sent us confirmation, which actually gave us until Jan 2020 to have the booking ticketed. This was booking 12 months in advance (or 355 days).
The whole booking was an amazing experience. The agent called us back about 15 minutes after we called the reservation centre to ask how many miles were needed to make a mixed class redemption, and said he'd found a way to make it less points than he originally quoted. Then told us how it was no problem to reserve the booking without enough points.
I've tried to attach a screenshot of the confirmation, not sure if its successful or if I've attached it 3 times. :)
