Am I better to keep using the same loyalty program even though I've maxed out all he status levels just for the miles, or should I switch to another airline and go platinum there too? What would be the most valuable to me in the long run. Particularly if I want to take the family on holidays.

If you want to take the family on holidays then keeping it pooling into one program is going to thelp there. Both of the major loyalty programs do have some benefits to going over your required status credits. Qantas you can start to pool towards LTG. Virgin if you earn enough over correct me if i am wrong but 500 and 1000 you can gift gold and platinum to another velocity memeber respectivly (which could help with lounge access if you have kids over 12)

Are you already with QF P1/VA WP?
If not, aim for these.
If you are with either of these, then start the climb with the other.
