I think running one 747 is more profitable than 2 x A330s and thats why they do it that way....

A daily 744 has a seems to have better premium seat ratio for the market than 2x daily A330.
A 744 has 255-270 Y seats, 2x daily A333 will have 538. 2x daily A332 might work, but it's still 486 Y seats with the same J capacity as 744.

In my opinion, Hong Kong would be a good market for double daily A330 flights. Cathay manages 4 flights on this route, which provide the best options for business travellers (No, I don't think Qantas could sustain 4 x daily flights - Hong Kong is Cathay's sole big hub, so they have a massive feed advantage).
However, worth noting that with those Jetstar planes coming back, QF is also losing some A330's by returning them to their Lessor. I doubt they will have much spare capacity in A330's or 747's. Need that 787 order.

Yeah I thought though since they have had an increase of 11 would be enough to have that service run by A330s? Quick question about the 787s, could we see some 787-10s in the order for Asia?

Although I guess since also the retirement of all the 767s would have made then increase the utilisation on the domestic network

Considering that two 747s are scheduled to fly to MHV in the middle of 2016, it does not seem as if Qantas will have a choice but to put A330ies on routes to HKG and Japan.

QF have stated that they plan to replace all 747 services to Asia with A330s. Of course that doesn't mean they can't change the plan. Worth noting though, that the main difference between these aircraft is the premium seating, 747 : 58J/36W/270Y, A330/300 : 28J/269Y, A330/200 : 28J/243Y. So a swap from a single 747 to 2 x A330 is a substantial increase in Y seats.

IMHO too much direct competition from CX.
Would I like to see a double daily A330 to HKG? Yes
Will it happen? Probably not.
I think it could work if QF codeshared with the likes of MU to get HKG- PEK, SHA flights.
