Yeah there are plenty of good places depending on where you are.
Sheung Wan is the best option, there are heaps of good places there. Barista Jam on Jervois Street, Coco Espress on Queens Road, Brew Bros and a bunch of others.
In Central try Holly Browns, Fuel Espresso or Rabbithole.
In CWB, Cafe Corridor was good last time I went although that was ages ago.
Kowloon is more of a challenge. In Mong Kok, seek out Knockbox Coffee in Hak Po Street.
The Cupping Room, Classified and Simply Life are other chains that are pretty good.

All depends what part of HK you're in but i tend to like:
-The Cupping Room (Central
-Kava (Kowloon)
-18 Grams (There's a few on HKI and Kowloon)
-Kubrick
-Alchemy Coffee
-Arabica
That said I tend to enjoy Australian-ish coffee (usually a piccolo) and find the indie looking places always serve best. HK and Singapore probably have the best coffee in Asia by our standards but it's really down to personal preference.

As noted above, Sheung Wan is popular for coffee due to the prevalence of brunch spots. The Elephant Grounds, tucked at the back of a gift store, used to be less well known but is getting quite popular.
Central has a bunch of decent coffee spots for the office crowd that offers (and understands) what expats, particularly Australians are used to.
Outside of Sheung Wan/Central, the Coffee Academics is another name worth checking out as they have both HK and Kowloon locations and their product reminds me of the quality you get in Australia. Their flagship is in Causeway Bay (Leighton Road); Wanchai store is on Johnston Road, short walk from MTR station (turn left after coming up Exit A3) and if you find yourself shopping in TST; there's one inside the Harbour City Mall (north side)

Yes fuel espresso does a great coffee. They also have one up in Shanghai.

If youre in Tsim Sha Tsui, try Agnes B. Café at K11, I find that their coffee stays away from the sickly sweet version of coffee that the locals like and is much more like the Melbourne coffee (although not perfect) :P

There are 5 stores - check the website for locations. I went to the Wan Chai location and had an excellent coffee and a great breakfast. I consider myself a bit of a coffee snob and was extremely impressed with their coffee.
