Which Frequent Flyer Program is best for frequent flights to Europe from Sydney? I was thinking about one of the Star Alliance airlines, as they would give me the most flight options?

As LondonAussie said, Kris Flyer would be your best bet if you want to be with Star Alliance, but other than I would say QFF because Oneworld.

Some general comments:
a) For travel within Europe, SkyTeam has excellent coverage of Europe, the 'near' Middle East and Russia.
Think Air France, Alitalia, Air Europa KLM, Tarom and Czech for Europe.
For the Middle East, you have MEA and Saudia. Russia is covered by Aeroflot,
Asia / China is covered by China Eastern, China Southern, Xiamen Air (ex mainland China}, Vietnam Air, Garuda, Korean and China Airlines (Taiwan).
In the Americas you'll get Delta, Aeromexico and Aerolineas Argentinas.
b) Star Alliance is beneficial for its strong Asian connectivity (Air China, ANA, Asiana, EVA, Singapore, Thai, Air India, Turkish, etc.
Within Europe, you'll get Austrian, Brussels, Lufthansa, LOT, SAS, Swiss and some lower level regionals such as Adria, Aegean, TAP and Croatia.
c) Oneworld is typically more 'business-focused' than the other two. It also has more even global coverage, by continent.
In your case, as a local resident, OW will have the advantage of QF as an anchor member (with local specials) and great coverage of all Australia, Asian coverage via QF's network but also those of Cathay, Malaysian, British Airways, Sri Lankan and Japan Airlines. In Europe, you'll have access to British Airways, Finnair, Iberia, Air Berlin, Niki etc.
Russia is covered by S7 and the Middle East by Qatar, Royal Jordanian. In the Americas, you'll get American Airlines, LAN and TAM.
