Are Virgin Australia retaining Premium Economy seating alongside their new Business Class? If so, which planes will get Business seating / remain as Premium Economy?

No, all premium economy seats will be ripped out and replaced with business class seats and bulkheads and dividers etc. There has been rumours that they may introduce a "premium economy" product in like row 3 or something, like Virgin America's Main Cabin Select.

Would like to see them offer extended pitch for frequent flyers at the front of their A330s when they get themselves a new product next year... Have the usual 30-36 J seats in the front cabin, then have 3-4 rows (20-30ish seats) at the front of Y with 34"+ pitch so that FF's who aren't allowed J seats have some incentive to fly with VA over QF...

Yep, I'd agree – would like to just a few rows of an 'economy plus' product with extra legroom + meal, similar to the way AirNZ's Works or Works Deluxe package differentiates from the main economy experience.
