Is that enough time to go through customs and whatever and checkin at Jetstar in domestic?
Thinking to just book a QF flight and tag it on to the itinerary but all the QF flights will add about another 6 hours with a long stop over in Brisbane and I'm not in the mood for that
2 hours should be enough I'll consider booking a virgin flight leaving at 10 then instead, will probably have it booked once in the air knowing rough arrival time
If memory serves, the minimum for international to domestic transfer at SYD is 90 minutes, but I would not suggest cutting it so fine. Five hours is plenty - but there is always the risk that you would fall asleep and miss your connecting flight.

5 hrs is plenty. 2 should be enough.
