DFW every time, avoids LAX and more options getting into NY as it's AA hub. Only downside is the lounge options at DFW on the return, although AMEX lounge is great option, but l understand entry conditions have changed recently.
Just to add to the above options China Airlines via TPE with their new A350 non stop to JFK connecting from the SYD over night. If you choose the DFW option consider Newark as your NYC gateway if you re staying on the west side of Manhatten like Chelsea,Soho,Tribeca or downtown. The traffic can be lighter.
Well, this discussion is good timing. We've just won work in Guyana and need to be there reasonably regularly and the jump-off point to GEO is JFK. This is what I've worked out;
QF - Yes QF11/12 is straight through but the pricing is nasty (22hrs)
SQ - When they do go SIN/JFK will be awesome, but not till year end 2018 (unknown)
CX - This looks to be good for us as the timing is very nice and the CX product quite good (29hrs)
JL - Nice Seating all the way and I like the pain free JAL approach (29hrs)
QR - Yes nice product if you can get the new Business seats (32hrs)
EK - They've got something for everyone and A380 all the way (29/31hrs)
EY - Personally I still like the EY Business product in the A380 (32hrs)
So there you go. I don't fly US Airlines (sorry to say). And at the moment I'm leaning towards CX. Cheers!
The fastest and most direct route (best connections) from SYD-NYC is actually with United Airlines via Houston. SYD-IAH-EWR.
I am a frequent flyer with UA. They operate the Dreamliner across the Pacific, and Houston is probably the best USA entry/connection port from Australia (certainly better than LAX and SFO). The airport is very user friendly but there are two things I really like about this route. 1. The second flight is almost halved when compared to LAX-NYC or SFO-NYC - I find it is the second flight that kills you. And 2. UA fly in to Newark, and getting from Newark EWR to downtown New York is much easier and MUCH faster than from JFK or LGA.
As mentioned before SYD - DFW and then onto NY (La Guardia). I do this roughly every six weeks. 15.5 hours or less to DFW arriving at 1.30 pm or and then a transit to Terminal A for the NY flights. DFW is probably the most pain free airport to transit at. The afternoon arrival means you are throigh and have dropped off your baggage to NY within say 30 mins. Arriving at LGA is for me less pain than the run to JFK and traffic to Midtown. The AA service is fine (pack your food as service is limited to a drink and pack of pretzels). You will also get a greta view of NYC when approcahing LGA so a window seat is recommended.
It depends what you mean by "huge non stop flights". Is the normal 13-15 hour East AU > West US "huge"? The planned non stop SYD-JFK flights won't start until 2022 at the earliest.
I try to avoid LGA. That airport is just to damned annoying to get to/from (and many Americans share that assessment).
LAX isn't as bad as it used to be. LHR is much worse. Connecting via TYO or HKG are ideas, though it's ~9 hours SYD-HKG/TYO and 12 hours for TYO-JFK or 15 for HKG-JFK.
Off point but BevanMcBevan got me checking the airlines that serve GEO. Carribean, Copa ( Panama) or Surinam Airways. Should make that last leg interesting. I d pick Copa being Star and close to United.
United to IAH then PTY then GEO has terrible layovers and a non preferred US airline. Surprisingly Air China does PEK IAH PTY twice a week on a refurbished 777 with an over night in PTY before Copa to GEO. Gives a lot of options for repeated journeys.

I vote for DFW or YVR as your transit cities - easy airports and friendly immigration staff. And yes - anything to avoid JFK but pick LGA instead.

I would say via LAX on QF though could go CX via Hong Kong or even Air NZ via AKL as Emirates Qatar and Etihad involve to much longhaul flying
