In theory the Pay Wave (or contactless cards) should work as US cards have the micro-chip, which either stores transactions for less than $30 (and those transactions will be sent in bulk by occasionally asking you to do a Chip n PIN transaction).
Some retailers systems may request Chip n PIN for every 3rd contactless transaction.
Ultimately, it depends on AMEX as they program the micro-chip.
Do not forget with AMEX you have to SWITCH ON the contactless facility, either Online or via Phone App.

I got sent the new metal Platinum card a couple of weeks ago and can confirm PayWave does work. However a few things are a bit different to my old plastic one!
With the plastic one anything over $100 required a PIN. Fair enough. Now with the metal one it's all over the place! I purchased an $850 item last weekend, did the paywave thing and.....no PIN, no nothing!
Then a couple of days later I bought a $15 magazine with paywave and it requested my signature, huh. I can't remember the last time that I signed for anything on the AMEX.
It's all good however. I do like the look and feel of the new metal card :-)
Having to sign for a purchase made on a new AMEX card is actually a design feature by AMEX, although it's meant to happen the first time you insert the card and you'd otherwise need to enter a PIN - it helps ensure the card is signed as required, while also allowing the EFTPOS terminal to 'activate' the chip and after a few uses to store the PIN locally on the chip, to allow for instant PIN verification at terminals that allow it, which can allow transactions to be approved when the network is otherwise offline, or where machines don't support server-side PIN verification (particularly overseas - in some countries even where the standard is Chip+PIN, if the PIN isn't programmed onto the chip it'll always make you sign: so having the PIN set up on the chip like this makes things easier when you travel).
You'll know your PIN has been configured correctly once you start seeing "PIN OK" on the screen of some newer EFTPOS terminals before the transaction has actually been approved.
Oh, one other tip: the new metal card is ever so slightly thicker than the old plastic card (because it's two materials forged together: metal on the front which gives it its shine and weight, and plastic on the back so that contactless works). If you have any problems swiping it or inserting it into card readers (because it's just a tiny bit too thick), you may instead just be able to tap it and enter the PIN (including for purchases over $100), if the terminal supports AMEX contactless as a workaround - but I don't believe it's as thick as Centurion, so I don't think that'll be much of an issue: again just something to keep in mind if you're travelling overseas trying to use unfamiliar EFTPOS terminals.

AMEX Cards in the US - specifically the metal platinum card does not have the Pay Wave or any type of contactless ability... Just FYI.
