There are only less seats in Business on the 333 compared to the 2 remaining non-refitted 332s (the refitted 332s have the same seat count in Business as the 333) because the old layout was 2-2-2 whereas the new one is 1-2-1.
In any case, the 333 has more seats in Economy than any of the 332s.
If it is showing that the maximum number of seats in the A330-200 is around the 310 mark, someone hasn't updated the fleet stats. Prior to the Suites coming online, the 330-200 had recliners in business which took up less space than the skybeds in the 330-300 hence why you were able to fit in more seats. From memory the densest configuration was 42J/268Y, however the 330-300 had 30J-267Y. Currently the 330-200 has less seats than the 330-300 due to the suites coming on board on both.

Can anyone explain why the 300 is about 5 metres longer than the 200, yet has less seats?

VH-EBO, VH-EBS & VH-EBV have been reconfigured to C27Y224, now a total of 251 seats on each of these 332s.
