I'm flying back on EY from Europe to WLG via SYD in May (economy) but the final leg is an EY ticket operated by NZ.

If you were departing from Sydney on Etihad as a VA Platinum, yes you'd have access to The House. But you're only arriving on such a flight, then you will transit at Sydney and fly out on an Air New Zealand flight, and despite it being ticketed by Etihad it's the operating airline which trumps for lounge access, and you won't get access to the NZ lounge with your Velocity Platinum card. If you have an eligible American Express card I would whip that out and head to the AMEX lounge, it's really a very nice little lounge.

It seems so ridiculous that at an Etihad/Virgin branded lounge that a Velocity Platinum can't get in on an EY marketed flight when there's no VA connecting service available. Especially given I'll have access to the EY First Class Lounge before the flight.

This doesn't seem ridiculous to me at all? There are onward connections to Wellington on VA services sold by Etihad, which may have been a better fit for your needs.
