I am a Qantas Gold travelling to Paris for Christmas with British Airways. On the way back I have a 8 hour layover in London (all one ticket). I am looking to check in a further bag in London with Christmas presents from the family. This is in addition to the one I will have checked in in Paris. While my baggage allowance is 1x 23kg bag plus my OW Sapphire gets me another 1x23kg bag.
I am trying to understand if I can check in an additional bag during the layover? I wont exceed my 2x23kg bag allowance

Not a definitive response. But I don't see why you couldn't. Obviously you'll be clearing immigration to so do. But I would have thought this is ok, so long as your under your total allowance. I've done something similar with Qatar at Doha when I checked an additional bag after Mrs Ourmanin decided to check how well her credit card worked in Qatari stores (very well). Our other bags had gone straight through. We stopped for just under 24 hours and added an additional bag when we checked in for second flight. Try contacting BA via their online web form and hopefully then you'll get a written response which can be shown at LHR in the event staff at check in have a different idea.
You shouldn't have any issues, however worse case check you can check your luggage to LHR, pick them up and then re check once you have your additional bag.
I'm at Beijing airport right now and just observed a customer doing exactly this. Different airport, different airline, but does demonstrate that it is technically possible for the airline/airport IT systems to accommodate.

Can't see why not as you are not exceeding your limit, and they can see your other bag on the system

Yes you absolutely can. BA will just tag your bag and send it
