I imagine they're either waiting for slots to come up, or waiting to ride the tumultuous NZ split and lounge network rebuild first. I can't imagine them starting the route before they build the BNE lounge

They would take one of the A330s from the MEL/SYD-PER runs to do the BNE-HKG route.

I have heard that a 2nd HK out of Syd may be in the works, before Brissy....

2nd SYD-HKG daily is not very likely, let alone on the radar.
You may have mixed it up with previous announcements of SYD and/or MEL to one of the major Chinese ports e.g PVG/PEK once slots open up there. Perhaps the SYD/MEL - China route may occur before BNE-HKG.

Who mentioned daily? 4-5 days a week would be ample, to give business travelers a choice of day/night flight would be my thought

HNA is looking at selling their stake in Virgin so I don’t think expansion into HKG is very likely soon. In fact, I predict the opposite...

Once they’ve done the appropriate cost-benefit analysis and decided they actually can make a buck out of it would be my guess

HKG is very slot restricted, and Virgin will need another plane. Can’t see it very likely in the foreseeable future.

Once again they will take the airbus off their transcom route and operate with a 737 which have no flat beds and no IFE
