Great interview. Re the "light, clean and healthy sashimi lunch" -- I agree, sashimi definitely feels like this when you eat it. However a visiting microbiologist from Japan told my dad once (who is a doctor) that you can safely eat as much sushi/sashimi as you like -- as long as it is deep fried!!!
